Chuck wagon cooking proved to be the order of the day at the 27 th annual IACP (International Association of Culinary Professionals) Conference held in Dallas, Texas in April, 2005.



 

 

 

Food Writer Sharon Hudgins of McKinney, Texas, Chef Tim Love of Lonesome Dove Western Bistro in Ft. Worth, Texas and Tom Perini of Perini Ranch Steakhouse in Buffalo Gap, Texas, gave one of the 60 educational sessions at the conference. Over 1,200 members from 33 countries attended the seminars, master classes, tours, socials and networking sessions. Jacques Pepin, Martin Yan and Chicago restaurateur Rick Bayless were among this year’s speakers.

“Come ‘n Get It! Chuck Wagon Cooking on the Ranch and On the Trail” proved to be quite an educational and fun session. Attendees learned about the three "Bs," which are Beans, Beef and Biscuits. After talking about the unique history of cowboys on the trail, the presenters shared the following 8 recipes:



Texas Chicken Fried Steak with Cream Gravy
Ranch Beans
Jalapeno Cornbread
Peach Cobbler
Sourdough Starter & Bread
Cowboy Caffee
Braised Colorado Lamb Shank with Three Bean Ragout
Dutch Oven Scones
Apple-Cranberry Empanadas


Tom Perini brought his fully stocked chuck wagon and the attendees went out on the lawn to take a look at it. Tom proceeded to talk about what life was like for the cowboys of yesteryear, from the very strong chicory coffee to the lack of fresh fruits and vegetables to the need to cook and eat 3 meals a day on the trail.
