Nut Filled Phyllo Triangles

Makes 50-60


1 lb. phyllo pastry
1 lb. pecan/walnuts, ground
1 ¼ lb. butter, melted
½ tsp. cinnamon
2 Tbsp. sugar
2 egg yolks

In a large bowl combine and mix well the ground nuts, 4 Tbsp. of the melted butter, cinnamon, sugar and egg yolks for filling.

Cut phyllo pastry in strips of desired width. Place 2 strips, 1 on top of the other, brushing each with melted butter. Place 1 tsp. of the filling on 1 end of the strip and form a triangle. Proceed in this manner until all filling and phyllo are used. Place triangles on a buttered baking sheet, brush tops with butter and bake in a preheated 350° oven for 20 minutes or until golden brown. Dip each in warm syrup.

Syrup:
2 cups sugar
2 ½ cups water
1 slice lemon
1 stick cinnamon

Combine ingredients in a saucepan and bring to a boil. Lower heat and simmer for 10 minutes to make medium syrup. Cool slightly.
