Ingredients

Tofu

  • 15 oz. firm tofu
  • 1 tbsp low sodium gluten-free tamari
  • 2 tbsp toasted sesame oil

Quinoa

  • 1 cup quinoa
  • 2 tbsp sugar
  • 2 tbsp low sodium gluten-free tamari
  • 2 cups water
  • 4 tbsp brown rice vinegar

Sushi rolls

  • 6 nori sheets
  • 1 large red pepper
  • 1 large carrot, peeled
  • 2 Persian cucumbers

Sweet Dipping Sauce

  • 2 tsp toasted sesame oil
  • 2 tbsp brown rice vinegar
  • 2 tbsp sugar
  • 2 tbsp low sodium gluten-free tamari

Directions

  • Remove tofu from the package and drain water. Place it in a tofu press to drain out excess water for about 15 minutes since we need it slightly crispy. Cut it into thirds, then lay it flat and slice into four squares. This makes 12 tofu squares; easy to flip. Heat sesame oil in a hot pan and add your tofu and tamari. Cook until browned and crispy (slightly) on both sides.
  • Rinse quinoa and bring to boil. Reduce heat and cook for about 15 minutes (until water is absorbed).
  • Add tamari, sugar, and brown rice vinegar in a pan and heat until all the sugar dissolves. Mix with cooked quinoa and allow to cool.
  • Slice the carrot in half, and then slice each half into 6 matchstick slices. Cut the ends of the cucumber and chop them into 12 thin strips. Slice the red pepper into 12 strips. Set aside in a small bowl.
  • Mix the dipping sauce ingredients in a bowl until the sugar dissolves. Use can maple syrup instead of sugar.
  • Place a sheet of sushi seaweed (nori) on a rolling sushi mat, shiny side down. You can use a cutting board if you don’t have a sushi mat. Pour½ cup of quinoa, spread, and press it on the nori sheet, ensuring at least half an inch of the far side is uncovered.
  • Cut the tofu squares in half to make 24 rectangular strips.
  • Place 4 tofu slices, 2 carrot slices, 2 cucumber strips and 2 long red pepper thin strips on quinoa. Roll over upwards tightly and wet the edge of the nori sheet with a bit of water to make sure it sticks. Cut to the size of your liking,1 inch. Repeat with the other sushi rolls.  Cut the sushi using a sharp knife and clean the blade between slices.
  • Serve with the sweet dipping sauce.
